NON ALCOHOL X-MAS CAKE


Hi All,
I make Christmas cake every year without fail, usually I buy alcohol only to make this x-mas cake, since I mostly use one cup of cake and balance will be wasted. So this year I planned to make it without alcohol.
Non alcohol x-mas cake tastes equally delicious like alcohol cake. The orange juice ,zest and lemon zest gives a rich flavor and good moisture to cake.And the relief is the cake will be wonderfully soft too.
Since you are soaking in fresh juice don’t soak the nuts for more than one day,soaking one day in refrigerator is enough.
This year I made this cake 4 batches for my friends and our family. And all the four cakes I made only with orange juice. But due to hurry not able to click proper pictures , still sharing the recipe.
Here is the easy ,yummy Christmas / plum cake/ fruit cake recipe for your ref,
COOKING TIME :  1HOUR.
SERVINGS : 10 MEMBERS.

INGREDIENTS :
Maida – 2 cups + 2 tblsp.
Fresh orange juice – 2 cup.
Sugar – 1 1 /2 cup + ½ cup for caramelizing.
Oil – 1 ¼ cup
Egg – 4 nos.
Cinnamon – ½” piece.
Cloves – 2
Nutmeg – peanut sized.
Fruits (dates, badam, pista, apricot, tutty fruity, raisins , prunes, plums , cherries) – 2 ½ cup.
Oranze, lemon zest – 1  tblsp ( grated skin) .
Baking powder – 1 1/2tsp.
Vanilla essence – 1 tsp.
Salt – a pinch.

METHOD :
1) Chop fruits and nuts to small pieces and add in a wide bowl.
2) Add fresh orange juice and soak them for 1 day or 8 hours in refrigerator.
3) For caramelizing , in a dry pan heat ½ cup sugar in low flame till it melts.
4) Sugar melts and starts browning, when sugar becomes little dark, switch off the flame.
5) Add ½ cup water to sugar syrup ( stay a distance away and pour water as the syrup may bubble up and hurt your hands).
 6) When water added , it crystallizes the  syrup, so switch on the flame and in low flame keep mixing till the syrup dissolves without lumps.
7) When the mixture reaches flowing consistency (little thick) , switch off the flame and keep it aside.
 8) Grind spices to fine powder.
9) Stain the nuts from juice well and mix the nuts with dry maida evenly.

10)             Sieve maida, salt , baking powder twice .
11)             In a mixer add oil, sugar and beat till sugar dissolves.
 12)             Then add egg one by one (one egg at a time) and beat till mixed.
 13)             Add vanilla and mix.
14)             Add the mixture to a wide bowl ,add maida mixture little by little and mix using spatula in flip fold method.
15)             Add caramelized sugar and mix.
 16)             Finally add soaked fruits, spice powder, zest and mix well.
 17)             Grease baking pan with oil and dust with maida generously (i used both my round and square pan)
 18)             Fill half of the pan with batter and tap twice to release the air bubbles and decorate as you wish.
19)             Pre-heat oven to 170” C and bake for 35 mins.
20)             When tooth pick comes out clean remove from oven and let it cool down completely. 
 21)             When cooled, invert to plate and let it sit for 1 hour .
22)             Then slice and serve.

NOTE :
1) Color of cake depends on color of caramelized sugar.
